Want to add fields to a huge document. I only need to add a few fields.

The document has loads of tables so I just want to do it manually without using the "Page Pass" function

The easiest solution for adding form fields is to use the Select Object tool. When this tool is active a right click on a form field displays a menu for adding another form field.  It is extremely fast to use.

There are two easy ways to access this tool

1. Place the toolbutton for the "Select Object" tool (search for it) onto the quickbar. I have the "Button" tool on the quickbar so I can easily add a new field to a document with no fields.

2. In the Acrobat Preferences, On the "General" panel, check the first item "Use Single-key accellerators.."

Now pressing "r" will automatically start the Select Object Tool, press "h" to go back to the hand tool (which is the default)

Use the short cut CTRL+SHIFT+7 to enter form edit mode and add form fields.

However, you can only add fields in Acrobat if the PDF form is an acroform.

Bernd almost solved this, but unfortunately it isn't as straight forward as clicking "change".

Before you click START you need to click change (which is below the start button, as Bernd points out).

Once you click the change button this will bring up a pop up with lots of different options (quite confusing if yo uask me!).

From here you need to select Forms on the left hand side (if it doesn't open here by default).

Then in the general box there are 6 check boxes. The bottom checkbox "Automatically detect Form fields" needs to be de-selected and then you need to click OK.

You can disable the "form field auto detection":
