How to disable a text compression in Acrobat Distiller?

Compression of text is always on. To turn it off, set the appropriate option Distiller.

Where can I find this option to disable compression?

I assume this is related to your other question: How to remove the filter in the metadata?

Open up Distiller and select Settings>Edit Adobe PDF Settings and select the job settings you want to modify. Then go to the "General" tab and set "Object level compression" to "Off":
