Permanent metadata from scanning

I'm wondering if there is a way to permanently save the owner name and date created found in the details tab of the properties of a document. I'm using a document storage system that I use to file scans to. The issue is that when I pull the document from that program after it has been filed, the file gets recreated and the date created changes to the time it was pulled from the document storage program and the owner would also change to whoever pulled it. Is there any way to set these sets of data to remain permanently no matter how many times it's 'recreated' on anyone's desktop? If something similar to this isn't possible in Acrobat, does anyone else know a program that could accomplish this?
