I have been trying to get Adobe Acrobat to hide some pages of the document I am working with and them get them to come up when someone has checked a specific checkbox.

You can show/hide pages in Acrobat, actually, but it requires converting them into Templates first.

You will not be able to show/hide pages in pdf document but you can set up bookmarks and button in acrobat to jump to the relevant pages into the PDF.
