Scanning pencil documents in Adobe

I just upgraded to a new version of Adobe and I am having trouble scanning documents that are in pencil. I go to File => Create => PDF from Scanner => Custom Scan. For color mode, I select Black & White. When I go to scan, it scans all of the pencil as gray. How do I get the pencil as black? I had no issue with this on my old version of Adobe.

An alternative is to make use of the scanner vendor provided driver software to create a black & white output image (TIFF or JPEG).

Then use Acrobat to create the PDF from this image file.
