Hi, from a legal perspective...      other than looking at 'date modified'…     can you tell me how can Adobe Acrobat DC
show if an electronically signed document has been changed since it was signed? Thanks!

Please provide are you signing documents with digital certificates or with Adobe Sign service .

If you are signing documents with digital certificates , then under document properties only you will be able to get the information related to the modification of the document.And if the document is signed with the option 'Locked Document after signing' , then it won't be possible to make changes in the document.
