Will Adobe Acrobat Pro create a Table of Contents for me based on all of the pages I've combined into one file?

No. However, it can create bookmarks, which in turn can be converted to a clickable TOC using a script, such as this one I've developed and which can be purchased from here: Custom-made Adobe Scripts: Acrobat -- Create TOC from Bookmarks
