Is there any way to turn on and off a watermark based on a specific date or a length of time, e.g. 120 days old

You can use JavaScript to display a watermark after a specific date. Of course, the user can turn off JS in Acrobat/Reader or change the system date on their computer to avoid that.

Not sure what you mean regarding showing it after X amount of days... Starting from when?

We have not gotten the SDK yet, If it can solve the problem then we will go ahead with brining it in-house
