Update headers based on content

Is it possible to have header text be updated based on the contents of a PDF?  I this case, there are some values in the document, e.g. DocNumber and revision, the requirment is to have headers and footers updated to reflect these values and show page numbers.

Yes, but this is a function that should be added to the Acrobat software, as a plugin or an Action.
If you know what and where to look on the page, a script can easily update the content of a text field placed in the header.

Displaying page numbers in text fields is easy.

In theory you might use for fields for this. But best not, especially as many PDF viewer apps will ignore them. Realistically you should regenerate the PDF from the master each time these change.
