Using Adobe Acrobat DC with EPSON workforce 7620. To create a scan it wants to create an image instead of a doucment. How can I return to getting a color document, not image?

First of all immediately update your scanner/printer drivers. After updating drivers when "file save settings dialog box" appears,select the file format you want to use in the Image Format Type menu.If your file format provides optional settings, click the Options button to select them.Choose any of the optional settings you want to use by selecting their check boxes. Click OK.

The dialog you are seeing is because of the scanner driver (WIA) you selected. Name of the options (like Color picture) are although using picture word here. But this option also won't scan images but a PDF document.

You can select other option in scanner dropdown(Epson WF-7610/7620 series). It will enable all the disable options visible on the screen. you can select any settings you want by clicking gear icon (*) in front of any radio button.
