Using Adobe Acrobat IX Pro, how do I display advanced property settings, specifically pixel dimensions?

PDF doesn't use pixel as a page size dimensional unit.  The default for page size is "points" (72 pts = 1 inch).

With that said you could use Acrobat Pro's Preflights. There are profiles that will analyze page content and provide an output report of information.
