Undesired and unactivated fonts keep appearing

I have activated only a few of the Garamond Premier fonts for use in InDesign. Yet the entire family of fonts constantly appears in the font list, and a version I don't want is the default for "find/replace." How can I prevent undesired fonts from appearing? And in a related question, how do I delete fonts no longer needed from the font list? It seems as if every font I've ever used appears, not just those activated and in actual use in the document.

    I am using CC version 5.9.0373, which updated with some difficulty this morning.

     

    Incidentally, both Photoshop and InDesign freeze and stop responding after the simplest request, such as saving or adding text. I constantly have to remove and reinstall the programs.
