Stop a render without losing the progress that has already been made

Is there a way to stop an in-progress render while keeping the video file that has been created up to that point and being able to view it? Sometimes I'd like to stop a render but keep the output file as a usable video. I guess I'm asking if you need to have the render complete to get a useable video, and if not, if there is a way to end the render progress while keeping said file.

No, this is dependent on the video container. Most files get finalized after the render is complete and you can't work with a partial file. This is why something like OBS Studio gives you the option to record MKV files instead of MP4s in case something interupts your screen recording. So it's less about After Effects and more about the file format.
