When I was using an, I selected a part of a shape that hadn't been converted to a symbol, and it disappeared on its own when selected (I didn't press any keys)

Does the shape disappear every time you select it, or does it only happen in that particular file?

Have you tried undoing the selection and checking whether the shape is inside a mask or hidden layer? That might explain why it disappears when selected.
