Hi, I am quite new to animate and am wondering if and how I would go about moving between two scenes with a growing circle from the middle that shows the next scene inside it.

using scenes creates problems that you have to work-around without any significant compensatory benefit.  ie, unless there's some major benefit to you, you should avoid scenes and use frame labels.

that said, to work-around your current problem if you choose to continue using scenes, duplicate the frame at the end of the preceding scene and copy it to the start of the following scene (or vice versa).  apply your transition just before the duplicated frame in the preceding scene or just after the duplicated frame in the subsequent scene.

Is there a way to crop an image into a circle, so it only shows a small area of it as opposed to it squeezing the whole image into the circle.

you can use a circle 'mask' to reveal a circular region of your image.
