Hi,

I melt some picture to create a panorama and then i cropped a part of the image.

Now i'd like to process the image in camera raw but I notice it's going to process the whole image. How to take into consideration only the useful portion?

Menu File>Automate>Photomerge... ACR preferences should not the set to open RAW files as Smar Onject layers.  PhotoMerges does not support smart object layers.  Your Image need to have a good amount of overlap. You crop the panorama after Photomerge stitches and blends you image into a panorama. To use ACR  you would first flatten or convert the panorama  to smart object layer so ACR can work on the merged image .

Where is the option about RAW files as Smart Object layers?

Usually I use JPEG, not Raw
