Can CF8 be run on a virtual machine? if so, what would the requirements be?

It can be ran, unsupported of course.

Running several servers on local VMWare on Windows, own dev server on a linux VPS, and I'm sure there are several (hundred) companies running it on Solaris zones.

Why don't you give it a try? Requirements would be as the normal CF requirements as detailed elsewhere.
