Question

CFChart yaxis value of date-time

We are attempting to create a CFCHART and we want to set a time in the value of the yaxis. It seems from our experience that the yaxis value can only be a number. Has anyone had any luck with trying to do this in the past?

Not sure how long ago you used CFCHART, but you can do most anything with it.  Adobe has integrated ZingCharts as the chart engine and you can use their JSON config to do whatever you want.  Find that here:
    https://www.zingchart.com/docs/api/json-configuration/globals

You can also link to the ZingChart JS file in your ColdFusion directory and build ZingCharts as native JS using your CF license which is located here: /cf_scripts/scripts/chart/license.js

So, you could download and use ZingCharts as such:
    <script src="/yourPathTo/zingchart.min.js"></script>
    <script src="/cf_scripts/scripts/chart/license.js"></script>
