HELP! I post an updated CFM to my server. The server has the updated CFM (I
checked). My IE6 browser keeps showing the old CFM! This makes it tough to
develop and test.

Where is the trouble? My server? My browser? I deleted all cookies and
files, and cleared history. No good. I shut the browser down. I opened a new
session. No good

Are you talking about the Caching page under the CF Administrator? I clicked
on "Clear Template Cache Now" button. I got the same wrong page. Funny
thing, the first update displayed. The second update won't. Here are my
    Caching settings

    Template cache size 1024 templates
    Enable trusted cache No
    Cached query limit 100
    Save Class Files Yes
    Cache web server paths No

Which setting(s) should I turn off?

I have this problem periodically, even with the trusted cache off. I would check to make sure you don't have caching enabled in the administrator page, and if it is, turn it off. If you need it on, then you have to login and clear the cache whenever you make changes.

There is also an administrator api that you can clear the api programatically. I've never used it, and could use some help making it work, but it is there and has worked for others.
