Upgrading from CFMX7 Standard to CMFX8 Enterprise

We've just invested in a new server and the decision was made to upgrade to CFMX8 Enterprise. We're currently running CFMX7 Standard on the (soon to be) old server.

I know you can transfer setting using.CAR in enterprise but we haven't got that option - Any ideas on how to easily transfer all the settings (datasources, scheduled tasks etc) across to the new server / CFMX version?

    Shut down CF 7, remove the license key from license.properties and start
    it again. It is now a developer edition with a 5 IP address limitation,
    but with the ability to export CAR files.

    Is it possible to then re-enter the license key and restore it all to it's former glory? We need to try and minimise downtime on the old server till we get everything tested on the new one.
