| in lookbehind

I'm trying to find instances of "salt" or "Salt" within a particular style.  When I use

(?<![T|t]able )salt

I get "Kosher" or "kosher" salt and "unsalted"

I've tried seemingly every combination of | with cap and lc kosher and "un" to exclude those, but nothing has worked. I think I'm tripping over brackets and parentheses in the wrong combinations. 

Can anyone help? THANK YOU in advance if you can help me with this.
