I know there are many resources available for PS & PDF material.  But, are there any providers of PS language courses and PDF language courses?  Preferably in the UK but I'd be interested in finding training providers for this topic.

This is a reply very long in coming, I know, but PS & PDF courses are what I do for a living. I've taught on-site courses to all the major printing and printer companies (including Adobe Systems, itself) on four continents.
