By PS, we will assume you really mean PostScript and not Photoshop!

Since PostScript is a programming language and because there are any number of ways to express text to be printed in a PostScript program file and because PostScript is not necessarily an ASCII format, we strongly recommend against editing PostScript. Assuming you are actually going to print the catalog from the PDF file you have, you can use the edit functions of Acrobat Pro to do limited text touch-up if you have the fonts used by the text to be edited actually installed on your system.

The best solution of course is to edit the original content and regenerate the PostScript and then regenerate the PDF (assuming that the program used to do the layout of the catalog doesn't have a direct PDF export function which is generally preferred over the distilled PostScript route).
