Does anyone know what are the differences, if any, between the Roman version of Minion Pro and Minion 3?

You can find detailed information about Adobe Minion 3 at https://minion.typekit.com/, The Typekit Blog | A classic for 30 years, updated: Introducing Minion 3 as well as https://minion.typekit.com/history/, https://minion.typekit.com/usage/ and https://minion.typekit.com/preview/.

Although it is an evolution from the existing Adobe Minion Pro with redesigned support for Greek as well as new support for Armenian, IPA (phonetic characters), and optical sizes, there are other refinements as well and as such, I would strongly discourage any assumptions that existing content using Adobe Minion Pro can be set to using Adobe Minion 3 without some variations in line breaks and appearances.
