Text not loading on application landing pages?

When opening any Adobe program (Illustrator, Photoshop, and InDesign specifically) on my 2015 Macbook Pro, the programs work just fine overall, but the text on the landing/loading page for each app shows (mostly) as just boxes with x's in them, as if the symbol is not supported - but for every letter of (almost) every word. (see screenshots) Once in the respective app, the menu text works fine for the most part - some of the tool tip pop-ups are buggy like the landing screen, but I can usually manage. I've contacted support previously, but they were unable to provide a solution. I've also looked to see if anyone else has posted about this issue, and was unable to find anything.

 

I've tried uninstalling/reinstalling, updated to the one of the most recent OS (Monteray) that my device can handle, and have made sure all Adobe programs are up-to-date. I've also tried installing Adobe Clean fonts in case it was something to do with my computer not having the necessary font file, but that didn't work. This does not happen on my PC (I know, I'm a heathen who goes between the two lol) ONLY on my Mac. I've provided a few screenshots below.

 

It's a livable issue, but it's inconvenient and limiting. Any assistance or advice (short of drastic alterations to my Mac) would be appreciated!

Did that also happen before macOS Monterey? Do you use any additional font management software?

Have you also tried to uninstall everything related to Creative Cloud? https://helpx.adobe.com/creative-cloud/help/uninstall-creative-cloud-desktop-app.html

Yes, happened prior to Monteray. I only started running into the issue with the latest software versions through Creative Cloud. I've also uninstalled/reinstalled multiple times with no success. It acts like there's a missing font file, so I've been trying to find the missing font to just install it and see if that helps.
