On my Windows 10 64 bit , only the Acrobat DC version with 32 bit installs from the cloud. How can this be ?
But for a plugin the 64 bit version is needed.
How can I make sure that Acrobat is installed in 64 bit ?

Are you absolutely sure of this? The 64 bit version is brand new, and not even available in all countries. I cannot imagine any plug-in maker would cut off 32-bit already. What plug-in says you need 64 bit? Please name it so we can check what they say.

What leads you to feel the 64-bit version is needed? Do you get an error message?

As I understand it, the Adobe installer checks to see if you have any 32-bit plugins installed, and if you do it then installs 32-bit Acrobat.
As you will not have a 64-bit plugin in a 32-bit Acrobat, the 64-bit version will never install this way.
So to move to 64-bit, you need to either remove the 32-bit plugins, and update. Or un-install Acrobat 32-bit completely, and then clean install Acrobat 64-bit, and then the 64-bit plugins.
