We are trying to create a PDF with Adobe Acrobat Pro DC Version 21.007.20099.61763 but the process is always freezing when the step "updating Tags" appears. For smaller documents (around 20 pages) this is working, but for documents with around 200-300 pages the process always freezes and we are not able to create a PDF. Could you help here?

Hope you are doing well and sorry for the trouble. As described, you are unable to create the PDF with larger pages (200-300) as the application freezes when the step "updating Tags" appears.
Is this a behavior with a particular file or with all the files with larger pages? Please try with a different file and check.
Please try to reset the Acrobat preferences as described here - https://community.adobe.com/t5/acrobat-discussions/how-to-reset-acrobat-preference-settings-to-defau...
You may also try to create a new test user profile with full admin rights in Windows or enable the root account in Mac and try using the application there and check.

Same here on Adobe Acrobat Pro DC Version 2023.006.202320. Sometimes over night or over the weekend the PDF can be created, but in generall it does not work at all. If i untick the Box "Barrierefreiheit und Umfließen durch Erstellen von Adobe Acrobat PDF mit Tags aktivieren" under " Grundeinstellungen" in Microsoft Word (Office 365) Plugin the PDF is created within Minutes from the 211 pages longe Dokument.

Would you mind collecting the Adobe CC logs https://helpx.adobe.com/creative-cloud/kb/cc-log-collector.html , Procmon logs (Win Only) https://www.adobe.com/devnet-docs/acrobatetk/tools/Labs/acromonitor.html and share them via any cloud storage. Just upload the log file to the cloud and generate the link and share that link with us for further investigation.

The Adobe CC logs are uploaded to the Adobe Server under "AdobeLogs_20231006_053614_128-win-GS.zxp". Procmon logs i will create over the weekend with an Atampt to Compile the PDF with the "Barrierefreiheit und Umfließen durch Erstellen von Adobe Acrobat PDF mit Tags aktivieren" under " Grundeinstellungen" in Microsoft Word (Office 365) Plugin switched on. Will than upload these logs to a cloud and send you a private massage.
