I've downloaded DC Pro, but when I launch the app all I can get is the Touch version. What am I doing wrong?

You mean Acrobat Reader Touch? If you don't need it uninstall it/ If you need both do NOT try to open PDF files by double clicking, you can't control what happens. Start the app and use OPEN.
