Hi,
If you have the creative cloud app installed, it should be on the list of applications you can install.
If it is not on that list, then can you let use know the package you signed up for?

If Edit does not work, it might be that the document is protected. Please go to File > Properties, then click the Security tab. This will show the current document's security settings; it must say "No security".

Ok, here are some ideas.
1. Sometimes there is a message along the top of the window, with extra information. For example "This file is a PDF/A file and cannot be edited". Do you see a message?
2. Please try adding text (instead of editing) for a test. Click the Add Text button in the toolbar along the top, click and type. What happens?
If you are still stuck, please share a screen shot of the document open in the whole Acrobat screen - unless the info is sensitive.

Adobe has always handled the name of Acrobat Pro oddly, even in the title of this forum the mention "Pro" is not indicated, which causes many confusion.

You seem to have installed Acrobat Reader NOT Acrobat. Please uninstall it with the Control Panel, then use the Creative Cloud Desktop app to install Acrobat.

No, Acrobat Reader never appears in this panel.
