I'm using the most recent update of Adobe Acrobat Pro.
I started with a single PDF that contained 8 pages combined all on one 'sheet'. To make a multi-page document, I created 8 copies and cropped each file to show only one page then merged them into one PDF.
My question is: I expect that all that 'cropped out' material is still in the file, needlessly making it larger. Is there a way I can delete everything except what I can see?

This can be done by redacting those areas, either manually or using a script.
I've developed the latter and it's available as a (paid-for) tool on my website, here: Custom-made Adobe Scripts: Acrobat -- Remove Everything Outside the Trim/Crop/Bleed/Art Box

I would create an 8 page InDesign file at the desired size (adding bleed if needed) and place the combined PDF into each page in the correct position, then export to a new, multipage PDF.
