I know that I can edit text in the bound boxes in the pdf, but is there anyway to edit the font of the text inside the blue shaded boxes or am i just stuck with the default font?

Do you have Adobe Acrobat or just the free Reader? If the latter then you
can only edit it if the form's author enabled that option.
To try it click into the field and press Ctrl+E. If the toolbar that opens
is empty then you can't do it.

Are you the form DESIGNER, working with Acrobat Pro?
Or are you a form FILLER, working with Acrobat Reader?
Or something else again?

I have acrobat pro dc and when highlighted the text I want to change from the blue shaded box it says "no current selection"

If you have Acrobat go to Tools - Prepare Form, then right-click the field, select Properties and you'll be able to change it under Appearance.

This comment was really helpful for me. I had a form where the blue fields did not line up properly and the format was very jumbled. By using the "Prepare Form" editing view (which I had previously mistaken the purpose of) I was able to resize and move around the blue fillable fields to clean up the layout more.
Note: This was not my form, and I was previously hitting a lot of roadblocks such as "No Selection" and greyed out text format boxes while typing in the blue fields. This was the best solution to my problem.
