When creating fillable PDFs on a Mac the default font for text fields is Helvetica. I want to change the default font to Arial so I know there will be no problem when filling out the PDF on a PC. Can this be done?

Acrobat and Reader both come with a built-in copy of Helvetica that is used for form fields.
Only if you try to edit the actual static contents of the file and it uses Helvetica will you have issues.

I thought Helvetica is a Mac only font and the equivalent on a PC is Arial. Maybe that has changed?

If you do want to change it, though, just change one field and then right-click it (in Form Edit mode) and select Use Current Properties as New Defaults.

Hello, this does not seem to work as each field has a different name. Is there a way to force Adobe to use a particular font when generating a fillable form?

If you refer to using the Fields Detection Wizard, then no.
