How does one change the color of text to pure black (either grayscale or CMYK with no CMY values) while keeping the photos in color?

I am not sure what exactly are trying to achive. If you're using Acrobat Pro, keep in mind that Acrobat is an PDF editor, not a graphics manipulation program (i.e. Adobe Photoshop).
Would you mind providing with more details about your work?

Thanks for the reply.
I work in a school, the kids have designed a "newspaper" that has text and photos and they send it to me as a PDF (I think they are using google slides to do the layout, not ideal but its what they are capable of at the moment). We are also printing on an older printer and the printheads are slightly misaligned, so we get cyan and magenta shadows on the text. I'd like to remove the other inks from the text so it will print in just black ink, but leave the photos full color.

You can create a custom preflight profile with a custom fix-up to change the color without affecting the images.
