Checking color profile of PDF shows same for any pdf

I want to check which color profile is associated with a pdf. The problem is, even though I export the pdf once again with a color profile (tested both included and not included destination profile) the profile listed in Output Preview, as well as under Color Conversion > Output intent is listed as 

'U.S. Web Coated (SWOP) v2'. If I change the "Simulation profile" in Output Preview, the profile listed under Color Conversion also changes.

I have tried with SEVERAL different PDF:s, even old ones that I know have specific color profiles assigned, and all give the same output: 'U.S. Web Coated (SWOP) v2'

I followed this guide to check the ICC-profile:
To check what (if any) ICC profile your PDF is currently using, take the following steps:
 
  1. Open your PDF in Adobe Acrobat Professional.
  2. Open the Convert Colors dialog box by choosing Tools, Print Production, Convert Colors.
  3. Look for the section called Output Intent.
  4. Check the Profile selected in the drop-down list.
