choosing grayscale 'color'

Working in Win 7, using current Acrobat Pro DC.

I converted a page to grayscale, and that worked fine.

But I want to adjust some colors, in particular, text color.

So - activate 'edit text and graphics', select the text, click the text color button.

The dialog only shows RGB color - I don't see an option for grayscale.

???

ok, I can edit in Illustrator, I guess.

But that's a kludge. Can I select/set a grayscale value within Acrobat?
