I'm really sorry if this has been asked and answered. My searching skills are not the best.
I'm running Windows 10 in a domain. I also have Adobe Acrobat Professional 2017 installed. I try to use Chrome as my default browser because many work sites don't work with IE. Several times a week (sometimes several times a day), I have to go into the Windows default apps and change the default app for PDF documents from Chrome back to Adobe.
If anyone has a solution or a recommendation, I would love to be done with this problem.

Hello,
You mentioned that you use a windows10 computer that participates in a domain.
Are you the networking manager with admin access to resources and configuration files in that domain?
Or are you a regular user in that domain with limited access to configuration settings?
Do you log in to that windows 10 computer through a user account and a user profile?

I am logging in with a regular domain account; however, it happens when I'm logged in using my domain admin account as well. I do have access to configuration and Group Policy settings. I haven't seen anything in GP that is causing it.
Thanks.

Assuming that the Group Policy settings are all good and that there is no need to modify them I would check the references below for each of the products in use,
In Windows 10
PDF browser plug in missing - Microsoft Community
For Chrome browser check these settings
PDFs don't open automatically in Chrome - Google Chrome Help
In Adobe Acrobat check the following
Display PDF in browser Adobe Acrobat, Acrobat Reader
And here for additional insights even though it applies to Internet Explorer settings
