Collate 2 PDFs, front/back

Hi all,

I'm on a Mac and am trying to find a way to collate two files together. For instance, scanning even pages into one file, then odd pages into another, and then combining them into a single file in numerical order. I have a large number of documents and need to find a way to do this in acrobat, a plug-in, or even a different application.
