We are mostly comparing PDFs generated out of Word or Excel and compare revised draft documents against each other. Despite the export from Word or Excel (which should provide for a good and readable PDF quality), the PDF comparison often highlights differences which actually are not existing. As such, some comparison files become useless as hundreds of changes are highlighted despite only a handful of changes have taken place. I already changed the settings (compare text only, autodetect, reports, presentation decks, scanned documents) but the result remains the same. Is there any option to change the sensitivity of the compraison engine to reduce the number of false identifiation of variances?

No. You can only set the type of comparison, in the dialog that appears when you use this command.

Previous version of Acrobat Pro was not as sensitive. Does anyone know how we can get that back?

As mentioned above, the Previous version of Acrobat Pro was not as sensitive. Would you mind sharing more information about this so we can get this checked?
Please share the current Acrobat and OS version number in use.
Share the sample files that you compare so we can reproduce the issue.
It would be helpful if you could share the screen recording of the workflow and the changes.
If by the old version, you are referring to the old UI of Acrobat, Use the steps mentioned below:
