I have several checkboxes in the design of a form that I uploaded to the form editor. Unfortunately the form editor recognized most of my very obviously square checkboxes as radio buttons. How can I convert radio buttons to checkboxes? Using Acrobat Pro DC 2019 on Mac OS 10.14.4.

There's no direct way of doing it, unfortunately.
The only way is by using a script that deletes the old fields and creates the new ones in their places.
For example, you can use this (paid-for) tool I've developed to do that: Custom-made Adobe Scripts: Acrobat -- Convert Form Fields Type
By the way, if you used the Wingdings font to create the placeholders for your check-boxes then you can use this other tool (also paid-for) I've developed to correctly identify them as such and create the right kind of form field on top of them: Custom-made Adobe Scripts: Acrobat/Reader -- Convert Wingdings To Fields
