Before I make a purchase I want to find out if I can, using this product, select a region in a PDF document copy then paste it into another PDF document that I am creating. The region can contain text and/or image(s), can come from a PDF file that has rendered text or simply be purely images created from a scan.

Yes, exactly!
You can perform N number of actions on pdf files whichever you can imagine/need, just go ahead, you will love it.

You can copy & paste, but it's not the recommended workflow. PDFs are not meant to be edited, it's always better to make your edits in the original program and export to a new PDF. You can purchase additional Acrobat plug-ins that can make editing a bit easier, but Acrobat is not a good substitute for InDesign or Illustrator, both of which have robust editing tools. If you are going to be making extensive changes to your PDFs with Acrobat alone, you can expect some frustration.
If you don't have access to the original native file, the next best choice is to place the PDF into another application, such as InDesign or Illustrator, cropping as needed, then exporting to a new PDF. If you need to remove or extract an element from your PDF, this can be done in Acrobat.

What I want to do is as follows, I had a Mathematics textbook scanned into a PDF file. The book is structured as Definitions, Theorems, Proof of theorem, examples and excersizes. I would like to cut it down to simply Definitions and Theorems hence my need to simply copy and paste to create a book of theorems. There is some rendering by the third party that did the scanning via their OCR engine but that is mostly useless due to the abundance of mathematical symbols and figures plus the quality of their OCR is less than ideal.
i am beginning to see that what I need is to be able to highlight a section on the document as if it was an image, copy to I guess clipboard and paste it into say Word.

I will try the trial but would someone be able to tell me just what “tool” would I use to be able to highlight a region of the document that I want to copy.

So essentially you need to re-arrange images of a scanned book, assuming you have permission to copy the book, you can do this in Word, if that's what you are comfortable using.
