Hi, I have been using Acrobat for a few years and have created forms previously that locked completed fields when a digital signature has been applied. Recently my company has changed my licence from Pro to Standard and now I can't seem to find this option. Do I need Pro to be able to do this or am I overlooking something simple?

Hope you are doing ,well and am sorry for the delayed response.
When you sign a PDF using your digital ID and save the PDF, the PDF becomes read-only by default and no further changes are allowed.
As mentioned in Acrobat Standard the option is missing, would you mind sharing the screenshot or a small video recording of the steps you are doing, for a better understanding?
Also, make sure the application is updated to the recent version 22.3.20282 . Go to Help > Check for updates and reboot the computer once.
Regards
Amal

Hello Amal,
My version is updated via Creative Cloud and is showing as fully up to date.
The document I am working on, I can't share it unfortunately due to the informaiton it contains. I will explain best I can:
There are two checks that two people from HR have to complete. Once check 1 has been done, they apply their digital signature and it locks all the fields associated with check 1.
Check 2 remains fillable until the following;
They then send the document to the second person who completes check 2. Once they are done, they add their digital signature and the fields associated with check 2 are locked.
Hope this makes sense. There use to be an option where I could apply properties to check 1 signature and tell it to lock only selected fields.
Regards
Sam

Are you trying to request signatures via the Adobe Acrobat application or via the Document cloud link https://acrobat.adobe.com/link/home/ , please try the vice vera and see if that helps.
Also go through the help page https://helpx.adobe.com/acrobat/using/send-for-signature.html for information about getting documents signed by others.

Would you mind sharing, the steps taken to send/circulate the PDF for signatures between the two signers?
Acrobat Reader is a freeware application with limited functions. It is used to view, fill & sign and annotate the PDF file https://helpx.adobe.com/reader/faq.html

Hi Amal,
We are sharing it as a email attachment, then saving it to a computer and opening it via Reader DC. I have tried to edit a version to remove sensitive information so I could attach a working version of what I what to achieve, but unfortunately the password has been forgotten for the document.

As described earlier, Acrobat Reader is a freeware application with limited functions. It is used to view, fill & sign and annotate the PDF file. The option to request signature is available with Acrobat Pro (paid version) .
To know how, please go through the help page https://helpx.adobe.com/acrobat/using/send-for-signature.html
