Hi. I'm working on a PDF in Acrobat and I need to change the colour of the highligher, but the edit preferences in the sidebar are greyed out. Why would this happen / how can I 'switch them on'? Thanks!

Hope you are doing well.
if we understand your requirement correctly, then you are willing to change the color of the highlighter, so that you can add highlight text within PDF. Is that right.
Please ensure a couple of things first:
1- To change the Highlighter color you need to access "Comment tool" not the Edit one.
2- Open PDF>Comment>select Highlight tool> Highlight the text you want> right click>Properties> Appearance> change Color>OK

3- The document you are working with, check whether that file allows you to add comment or highlight text or not. If not, then these tools [Comment, Edit, etc] will be unavailable. Open PDF>right click>Document properties (Ctrl+D)>Security
If this doesn't help, then share the screenshot of the Edit button you mentioned which is greyed out.
