how to remove color from field of an editable form before fill it

What "color" do you mean, exactly? The fill color? Text color? Border color?

And is it the field's own color, or is it the application's fields highlighting color?

The  fill color (light blue)

I need to have it trasparent

Go to Edit (or the Acrobat menu if you're on a Mac) - Preferences - Forms and tick off "Show border hover color for fields".
