Use the Edit PDF tools to select the image or text that used to be the watermark, and delete it.
Alternatively, the Redaction tools provide a search mechanism for finding text, and either obscuring it or removing it. If you have Acrobat DC, then search for the Redaction Tools.

I'm doing what you're saying but adobe can't "see" the watermark so that's not working

The Redaction tool can remove anything that's located on the page. Hold down Ctrl to switch from text selection mode to free-form mode.

Thank you for trying to help. When I do what you say all it does it put a big white box over everything - the watermark and what is under the watermark.
Does flattening or embedding just sort of melt the watermark into the file so it becomes part of the file?
