The properties tab is getting you outside of Acrobat's control into the printer drivers control.Acrobat will, however, honour the settings there. For all settings that Acrobat does not control, Acrobat leaves them at whatever parameter they are set.
If in that tab (that is available only for that kind of printers), the copy count is set at anything else then 1, it is the printer driver who sets it. You will need probably to go to the printers devices to be able to save that parameter permanently.

What is your OS and Acrobat and please indicate the version of both.
Acrobat reads whatever is default in your system. So you must have set the default copies to 6.

Thanks for the reply. I am aware of the document dependency and have successfully changed copies to 2, but obviously my default has been set to 6. I believe this might have happened when I upgraded to the DC Pro version. I have found no way to reset the default, but considerer uninstalling and then reinstall the Pro DC version.

Here's something to try...
On my Windows 10 machine, with an HP Laser printer, I can click on the Printer Properties button in the Acrobat Print dialog box, and tweak the printer's default settings on the Advanced tab.
See if that option is available for your printer, and if making changes therre fixes things for you.
I hope this is helpful. My best,
Dave

You pointed me in the right direction. My printer is a Brother HL -4150CDN laser-color and after I went to Windows 10 settings/printers and properties was able to set the default copies to 1. Thanks so much for your help.

It can't be an Acrobat problem. You my, however, uninstall/reinstall your software. It will not solve the problem.
