How do I format a checkbox in Microsoft Word 2010 that, when converted to PDF will fill and sign as checkbox not "Ab.."?

Trying to create a form that our end users can easily navigate. it involves checking boxes when certain areas have been met. Before the update, the end users would simply select "fill and sign" and then select the "X" and then click the boxes indicating things have been done. With the update when they select "fill and sign" these areas now populate into "Ab" and will not let them put an "X" in the area. It's incredibly annoying.

I've been playing with different shapes in Microsoft word trying to find a way to make a check box checkable as a "fill and sign".

How did you exactly create the form and which application did you use? Above is the behavior of form when its opened in Adobe Reader or Acrobat using Fill & Sign toolbar.

The form's behavior completely depends on the actions used to create the form.

Seems you converting the MS word file to PDF and where the checkbox behavior is changing? Saving MS file just as "PDF" is a way of creating PDF using Microsoft's own PDF creator. How does it works, we do not have hold on its mechanism.

If you use "Acrobat" ribbon available at the menu bar then the PDF will be created using Adobe Acrobat. Else, you need to contact to MS support to setup the right actions for form. 

For better understanding what we can do is to test the form at our end and share the output with you. You can share the form link here.
