Is there a way to add text to a document that will show when someone is viewing the document, but will not be there when they print it? This is similar to Microsoft Word's "Hidden Text" feature, but was wondering if there is a way to do this in Acrobat or even InDesign?
For example, If I wanted to put instructions on a document on what to fill out, but it won't show up when they print it.

Yes you may do that but using the Prepare Form tool. With this tool opened in Acrobat add a textfield object. Close the tool and type in the text you need to be displayed in that field.
Open the Prepare Form tool again, right-click on that textfield and select from the context menu "Properties".
You can make this field read-only and additionally select "Visible but doesn't Print" field property.
