Sometimes, when I go to complete a form in Adobe Acrobat Pro, it prompts with the incorrect information (screenshot attached.) For example, it's prompting to use my old name (Lauren White) for "Full Name" and prompts with my email address for "Phone Number." I have updated my name in my Adobe Account and in the "Identity" section of the Preferences. I also don't have the ability to change the "Edit Entry Lists" under the Forms tab (it's greyed out).
How can I update this saved information?

Go to Edit (or the Acrobat app menu on Mac) - Preferences - Forms and click the "Edit Entry List..." button under the Auto Complete section.

The screenshot looks like if you are using the Fill & Sign tool with the full desktop version of Adobe Acrobat or trying to edit a PDF using the Acrobat Mobile app (which is basically an Acrobat Reader version on steroids but with very limited editing features).
Both of these tools are not not the most appropriate tools to edit static PDF content.
For starters, the Fill & Sign tool will retain values that you might've used before
to sign a form electronically.
Please confirm if you are using an iPad mobile device with iOS and the Acrobat mobile app and not confusing it interchangeably with the full desktop version of Adobe Acrobat Pro DC on a macOS desktop computer.
If you are indeed using macOS, which operating system version?
And if you do have Adobe Acrobat Pro DC on a macOS full desktop computer, which version are you using that you can't access the Preferences settings from:
Acrobat => Preferences => Auto-enable text editing in Prepare Form
Can you confirm if that is the issue?

I'm using Pro on a Windows 10 machine. Generally, I can access the Preferences, but the specific "Edit Entry Lists" option is greyed out.
I understand it retains past info, but I'm talking specifically about the values that seem "default" for lack of a better term. The ones with fields noted next to them, not the ones with X's next to them.

I apologize. I misunderstood a few things.
I am still curious, is this happening with every document or with just that one PDF that you are wrestling with?
Since, you're on Windows 10, what happens if you ckick on Help => Repair Installation?
Or,
Maybe resetting the Preferences settings to Acrobat defaults.

It is doing it with multiple files, not just that one. I repaired the installation, and it was doing the same thing. But, it seems that resetting the preferences is working! Thank you!

Actually, I was mistaken. When I first opened Acrobat back up after resetting the preferences, the old name didn't come up. I opened a new doc, and it's showing up again.

When you reset the Acrobat preferences, did you used these tips:
Another approach that you can try, just for testing, is to create a new user profile on your Windows 10, sign in with that user account and deploy Acrobat like you normally would.
If Acrobat works fine with the newly created user accoubt, then there is something with with current user account that is taking over the Acrobat Preferences, like a registry setting value might've changed, for example.
