I've had this issue on several computers. We use quickbooks for our company, which has a Save to PDF function. This function uses Microsoft XPS Document Writer which is a printer built into all Windows 10 installs. Save to PDF works fine, until I install Adobe Acrobat DC Pro. After that install, Microsoft XPS Document Writer becomes corrupted, not allowing me to save to PDF, unless I go through all of the prompts to Print to PDF.
To repair the issue, I have to blow away the whole OS to get XPS Document Writer working again, no matter how many times I try to go in manually and repair it. Is there a fix to this issue, so Acrobat does not interfere with the Windows Save to PDF function?

There is nothing in Acrobat or its installer that does anything to modify any printer driver other than the Adobe PDF PostScript printer driver instance which has absolutely nothing to do with the Microsoft XPS or Microsoft PDF drivers. You may wish to contact Microsoft to see if they know of any issue, possibly of these drivers making assumptions that no other application owns the .PDF file suffix.
