Is it possible to set up macros (Mac)? For instance when commenting and editing, I'd like a macro/keystroke for "delete extra space" instead of having to type it each time.

No, you can't automate editing a PDF file in this way in Acrobat. You can use JavaScript to perform all kinds of tasks, but editing the static contents of the file (unless you redact it) is not part of it.
